Fresh Peach Cobbler

Ingredients

Filling

  • 8 large, fresh peaches, peeled, pitted and sliced into 1/4 inch wedges
  • 1/4 cup Country Sweet Sauce, mild
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoons fresh lemon juice
  • 1/8 teaspoon ground nutmeg
  • 1 teaspoon cornstarch

Crust

  • 1 cup all-purpose flour
  • 2 Tablespoons light brown sugar
  • 1/2 teaspoon ground cinnamon
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 6 Tablespoons unsalted butter, chilled and diced
  • Up to 1/4 cup boiling water
  • 1 Tablespoon white sugar

Directions

  1. Preheat oven to 425 degrees.
  2. In a large bowl, combine filling ingredients. Toss well to cover completely. Pour into a buttered, 2-quart baking dish. Bake 10 minutes to soften peaches and remove. Reduce oven to 350.
  3. Meanwhile, blend together flour, brown sugar, cinnamon, baking powder and salt in a mixing bowl. Cut in butter with pastry blender or fork until mixture resembles coarse meal. Stir in just enough water until dough combines together.
  4. Spoon dough onto peaches spacing evenly. Sprinkle with 1 Tablespoon white sugar. Bake about 25-30 minutes or until topping is golden brown.
  5. Serve warm with ice cream or whipped cream.
